Raw Sauerkraut

The difference between sauerkraut and raw sauerkraut - or kraut and raw kraut - is that raw sauerkraut has been fermented over days and weeks at room temperature, and has not been heat-treated or heated above 48 degrees Centigrade (or 117 degrees Fahrenheit) in the packing process. It has been jarred straight from the barrel - raw!
