Marshmallows have traditionally been made with gelatine — which makes them off-limits for vegans and vegetarians. Dandies solved this problem in the most straightforward way: they replaced gelatine with carrageenan (a seaweed-derived gelling agent) and soy protein to achieve the same fluffy, stretchy, toastable texture without any animal products.
The result genuinely works. Dandies marshmallows toast beautifully, melt into hot chocolate exactly as you'd want, and hold their shape in s'mores and desserts. The vanilla flavour is clean and genuinely vanilla rather than synthetic.
