Sheep's milk cheese has a deeper, nuttier flavour than both cow's and goat's milk — a richness that comes from the naturally higher fat and protein content of sheep's milk. Bergerie's organic version is firmer than their fresh goat's cheese, with a more pronounced, complex character that develops beautifully with age.
Made from organic pasteurised sheep's milk with live lactic cultures and rennet. The ingredient list is as short as it should be — milk, salt, cultures, rennet.
Certified organic. The milk comes from sheep raised on organic pasture without synthetic fertilisers or pesticides.
Serving suggestion: Excellent on a cheese board, grated over pasta and risotto, or crumbled into salads. Works particularly well with pears, quince and dark honey.
