Tempeh is a centuries-old Indonesian food — whole soya beans bound together by a natural mould culture into a firm, sliceable block. Better Nature have been making it in the UK since 2019, with a focus on transparency and quality that's refreshingly rare in the category.
Unlike heavily processed soya proteins, tempeh is made from whole soya beans — 44% of the product — fermented with the Rhizopus culture that binds them together and kickstarts the fermentation process. This fermentation does several things: it breaks down some of the natural compounds in soya that inhibit nutrient absorption, adds a gentle, earthy flavour, and creates a nutritional profile that includes around 20g of complete protein per 100g, plus B vitamins and minerals.
The live cultures present in the product mean it offers genuine probiotic benefit — something that distinguishes traditionally fermented tempeh from the par-boiled, flavoured versions common in supermarkets.
Certified organic by the Soil Association. Vegan. Gluten free. No additives, no fillers — just organic soya beans, water and culture.
How to cook: Slice and pan-fry in a little oil until golden. Marinate first for best flavour — tamari, ginger and garlic work beautifully. Also excellent cubed and added to curries, stir-fries or grain bowls.
