Clear Spot's organic tofu is as simple as tofu should be — organic soya beans (31%), water and nigari (magnesium chloride, the traditional setting agent). Nothing else. Certified organic by the Soil Association, made from non-GM organic soya.
The texture is firm enough to slice, cube and fry without breaking apart, while remaining sufficiently yielding to absorb marinades well. It's a genuinely good neutral protein base that takes flavour from whatever you cook it in.

How to cook: Press for 20–30 minutes to remove excess water, then pan-fry in a little oil until golden, or marinate in tamari, ginger and garlic before baking. Also works crumbled into scrambles, or blended into smooth sauces and smoothies.
