Sauerkraut is fermented cabbage — and when it's made properly, it's one of the most nutritionally compelling foods you can put in a shopping basket. Cultured Food Co's raw version uses only two ingredients: organic Dutch cabbage and organic sea salt. That's it. No vinegar, no pasteurisation, no shortcuts.
The traditional lacto-fermentation process — salt drawing water from the cabbage, creating a brine in which natural Lactobacillus bacteria proliferate — creates a product that's naturally rich in live bacteria, vitamin C, and easily digestible nutrients. The raw, unpasteurised processing keeps those live cultures intact, making this a genuinely probiotic food rather than a vinegary condiment.
The flavour is pleasantly sour and clean — not aggressive. A small amount (30–50g) alongside any meal adds both flavour complexity and gut benefit.

How to use: Eat cold, straight from the jar. Adding it to hot food kills the live cultures. Excellent in Reubens, alongside sausages, on grain bowls, or simply alongside any meal as a digestive condiment.
