Dark, dense and deeply flavourful — rye is one of baking's great characters, and Doves Farm's Organic Rye Wholemeal Flour is stone-ground from the whole rye grain for maximum flavour and nutrition. This is the flour behind proper Scandinavian-style rye breads, sourdoughs with genuine depth, and crispbreads with that unmistakeable earthy, slightly sour complexity.
Unlike wheat flour, rye flour's gluten behaves quite differently — producing the characteristic dense, moist crumb and excellent keeping qualities that rye bakes are loved for. Rich in fibre (around 15g per 100g), with a lower glycaemic impact than white wheat, it's also a nutritionally excellent flour. Certified organic and milled in Wiltshire from organic rye.
