The lighter, more approachable introduction to rye baking — Doves Farm's Organic White Rye Flour is sifted to remove most of the bran, giving a pale rye flour with the distinctive rye character but a milder, gentler flavour than wholemeal rye. It produces noticeably lighter loaves and crispbreads whilst still delivering all of rye's unique baking properties.
White rye is the flour of choice for those who want to blend rye into wheat-based loaves without the full intensity of wholegrain rye — a portion of it in any bread recipe adds a lovely subtle rye note and improves the keeping quality of the loaf. It's also excellent for lighter rye crackers and crispbreads. Certified organic and milled in Wiltshire from organic rye.
