One of the oldest cultivated wheats in existence — Einkorn (Triticum monococcum) is an ancient grain that was first farmed around 10,000 years ago and has remained largely unchanged ever since. Doves Farm's Wholemeal Einkorn Flour is stone-ground from the whole grain, giving a beautiful golden-yellow flour with a distinctive, rich, sweet and nutty flavour that's worlds apart from modern wheat.
Einkorn has a simpler genetic structure than modern wheat — it's a diploid grain (modern wheat is hexaploid) — which gives it a different protein and gluten composition that some people find easier to digest, though it absolutely contains gluten and is not suitable for coeliacs. Naturally higher in protein, lutein (a beneficial carotenoid), zinc and iron than modern wheat varieties, it's a genuinely nourishing flour that bakes into golden-crumbed breads, biscuits and pastry with extraordinary flavour.
