98% organic kalamata olives — that's essentially the entire jar. Hellenic Sun's kalamata pâté is built on properly fermented kalamata olives (the large, fleshy variety grown in the Messinia region of Greece) blended with just organic red wine vinegar and organic oregano for a product of extraordinary simplicity and quality.
Kalamata olives have a richer, more complex flavour than standard black olives — their high oil content gives a buttery richness and the fermentation process adds depth and umami. At 98% olive content, this pâté is essentially a spreadable concentrated kalamata — intensely flavoured and deeply satisfying in small quantities.
