Conventional jelly is set with gelatine — an animal-derived protein that makes standard jelly unsuitable for vegans and vegetarians. Just Wholefoods set their lemon jelly with carrageenan and locust bean gum — seaweed-derived gelling agents that produce a firm, clean set with a texture very close to the conventional gelatine version.
Natural lemon flavour and natural yellow colour (curcumin) keep the ingredient list clean. Sweetened with raw cane sugar. Vegan throughout.
Vegan. No artificial colours or flavours.
How to make: Dissolve the crystals in boiling water, add cold water and refrigerate for 3–4 hours until set. Works in all conventional jelly applications — jelly and ice cream, trifle, individual moulds.
