Longman's Strongman Extra Mature Cheddar — the boldest cheese in the Longman's range. Aged for significantly longer than the mild and vintage varieties, the Strongman develops a deep, complex flavour with a firm, slightly crystalline texture and a powerful, lingering finish. Made with vegetarian rennet at their Somerset dairy. Contains milk.

Extra mature cheddar is where patience pays off — the extended ageing allows the development of tyrosine crystals (the satisfying crunchy bits), a sharpness that prickles on the tongue, and a rich umami depth from the ongoing breakdown of proteins in the paste. This is the one for people who find mild cheddar too gentle, who want their cheese to actually announce itself on the cheeseboard. Pair with apple chutney, a proper pickle, or a dark, malty ale.
