Morgiel Organic Raw Gherkins in Brine

Morgiel are a Polish organic food producer with a deep tradition in lacto-fermented vegetables — and these raw gherkins are a genuine example of traditional Slavic fermentation. Organic gherkins are fermented in spring water and unrefined rock salt with organic garlic, dill and horseradish — no vinegar, no heat treatment, no preservatives.

True lacto-fermentation is what distinguishes these from pickled gherkins. The salt draws water from the gherkins to create a natural brine, in which Lactobacillus bacteria proliferate and gradually acidify the jar. The process takes weeks rather than hours, producing a complex sour character, a satisfying crunch and billions of live bacteria per serving.

Unpasteurised — the live cultures are fully intact and active. The horseradish and dill give a distinctly Eastern European flavour profile that's far more complex than vinegar-pickled alternatives.

How to use: Cold, straight from the jar — never heat them, as this destroys the live cultures. Excellent in sandwiches, on a cheese board, alongside smoked fish or in a Ploughman's.
