56% organic capers preserved in white wine vinegar — the classic Mediterranean condiment in certified organic form. Organico source their capers from certified organic production, preserving them in organic white wine vinegar for a clean, sharp brine that delivers the characteristic pungent, salty-sour burst of a good caper without excessive astringency.
Capers are the unopened flower bud of Capparis spinosa — a sun-loving Mediterranean shrub. The smaller the caper, the more intense the flavour. These are preserved in brine after initial salt-curing, which delivers a clean, bright flavour.
