Almost 50% stonemilled buckwheat flour — Orgran's pancake mix leads with the grain that gives it its distinctive earthy, nutty character. Buckwheat is naturally gluten free (despite its name) and has a rich, slightly bitter flavour that makes it one of the most interesting bases for pancakes, crêpes and galettes.
Tapioca and rice flour support the structure and give a lighter texture than pure buckwheat alone. Raising agents (monocalcium phosphate and bicarbonate of soda) provide lift. All seed oil free.

How to use: Mix with water (or plant milk for richer pancakes) and a little oil to make a smooth batter. Cook in a lightly oiled pan. The buckwheat batter may need slightly longer to cook than wheat — look for bubbles setting before flipping.
