Total Sweet xylitol is a natural sugar alcohol derived from birch wood (or corn cob — sources vary by supplier and season) that looks, measures and tastes remarkably like sugar while having approximately 40% fewer calories and a very low glycaemic index (GI of 7 compared to sugar's 65). It measures and behaves like sugar in recipes with very few modifications needed.
Xylitol also has a well-established evidence base for dental health — it actively inhibits the bacteria (Streptococcus mutans) that cause tooth decay, and is widely recommended by dental professionals as a sugar substitute for this reason.
Vegan. Sugar free (no sucrose). Low GI. 1:1 sugar substitute.
How to use: Substitute 1:1 for sugar in most recipes — baking, sweetening hot drinks, in desserts and jams. Note: xylitol is toxic to dogs — keep well away from pets.
