Raw Halo make their chocolate below 42°C — the threshold above which many heat-sensitive compounds in raw cacao (enzymes, flavanols, some antioxidants) begin to degrade. The difference from conventionally processed chocolate isn't always dramatic, but in the quality of the cacao character it produces, it's perceptible.
Their mylk hazelnut truffle bar uses coconut sugar as the sweetener (giving a lower glycaemic impact than cane sugar and a gentle caramel depth), cacao butter for richness, 22% ground hazelnuts for the nutty truffle character, creamed coconut for the mylk (non-dairy dairy) quality, and lucuma powder for additional natural sweetness and a distinctive butterscotch note.
