Barley malt extract is produced by sprouting barley grains, drying them and then extracting the sugars created during malting — primarily maltose, with some glucose and complex carbohydrates. The result is a dark, viscous syrup with a rich malt flavour that's distinctively different from any other sweetener.
Rayners' organic version comes from certified organic barley. The flavour is malty, slightly savoury and complex — less sweet than golden syrup or honey, with a rounded depth that enhances grain-based recipes particularly well. It's the sweetener used in traditional British malt loaf and is excellent in sourdough bread for crust colour and flavour.
Certified organic. Vegan. Contains barley (gluten) — not suitable for coeliacs.
How to use: In malt loaf, sourdough bread (a teaspoon feeds the starter and gives colour to the crust), granola, flapjacks, sauces and marinades. Dissolve in warm water for use as a liquid sweetener.
