Black treacle is one of the most powerfully flavoured natural sweeteners available — a by-product of the sugar refining process that retains an extraordinary concentration of the complex, bitter, smoky compounds that give it its distinctive character. Rayners' organic version is certified organic, produced from organic sugar cane.
The flavour of black treacle is robust enough to be used in small quantities — a tablespoon in gingerbread, parkin or malt loaf adds depth and colour that golden syrup or even dark muscovado sugar can't quite replicate. It also makes an excellent glaze for ham and root vegetables when combined with mustard.

How to use: In gingerbread, parkin, treacle tart, toffee, dark fruit cake, as a glaze for roasted vegetables and meats, dissolved in warm water as a traditional tonic. Use sparingly — the flavour is intense.
