Shipton Mill have been milling flour in Tetbury, Gloucestershire since 1977 — and their approach to milling spelt reflects the same craftsmanship they bring to all their flours. Wholemeal spelt is milled from the whole grain, retaining the bran, germ and endosperm for maximum nutrition and the characteristic nutty, slightly sweet flavour of spelt.
Spelt is an ancient grain with a different gluten structure to modern wheat — the gluten in spelt is more fragile and water-soluble, which is why many people who find modern wheat difficult to digest tolerate spelt better. It is not gluten-free and is not suitable for coeliacs, but offers an interesting alternative for those seeking diversity in their grain consumption.
Certified organic. Vegan. Contains spelt (gluten). Not suitable for coeliacs.
How to use: In bread (reduce liquid slightly — spelt absorbs less water than wheat), cakes, biscuits, pasta and pizza dough. Don't over-knead spelt bread — its fragile gluten structure means over-working makes it dense.
