Sunita whole tahini is made from stoneground unhulled sesame seeds — the complete seed with the outer hull intact, rather than the peeled/hulled seeds used in standard tahini. This single distinction has significant nutritional and flavour implications.
Unhulled tahini retains the calcium-rich outer hull of the sesame seed, giving it two to three times the calcium content of hulled tahini. It also has higher fibre and more of the sesame's natural phytonutrients. The flavour is more robust and slightly more bitter than hulled tahini — a deeper, earthier sesame character that's more complex but requires more assertive seasoning when used in dishes.

How to use: As a dip (diluted with lemon juice and garlic), in hummus (note the more robust flavour will alter the character of standard hummus recipes), in salad dressings, as a sauce for roasted vegetables, or spread on toast with honey or date syrup.
