The Coconut Collaborative's double cream is one of the most technically accomplished plant-based cream alternatives — 30% coconut oil in water, stabilised with corn fibre, potato starch, tapioca flour and fruit pectin to produce a cream that pours like dairy double cream, cooks without splitting and, crucially, whips to a stable, fluffy consistency.
The coconut oil provides the fat base; the starch and fibre combination gives the structure; the pectin provides the emulsification that holds the whole thing together in a form that behaves like cream. Vegan and dairy free throughout.

How to use: Use cold for whipping — chill the cream and bowl thoroughly before whipping. For pouring, use at room temperature. For cooking, stir in at the end of cooking over low heat. Don't boil vigorously.
