The Tofoo Co. have created something interesting here — a hybrid product that combines 51% tofu (water, soya and nigari) with 22% seitan blend (wheat gluten, salt and thickeners) to produce a product with the high protein density of tofu and the chewy, meaty texture of seitan in a single ingredient.
Seitan, made from wheat gluten, provides the firm, chewy, satisfying texture that makes it so effective as a meat alternative. The tofu base adds protein volume and a slightly softer, more neutral character. Together, they produce a product that takes marinades well, holds its shape through high-heat cooking and delivers a genuinely satisfying bite.
Vegan. Contains soya and wheat (gluten). Not suitable for coeliacs. High protein.
How to cook: Slice, cube or tear and marinate before cooking. Pan-fry in a hot oiled pan until golden. Works in stir-fries, curries, grain bowls and as a centrepiece protein. Takes on bold marinades exceptionally well — soy, ginger, chilli and garlic.
