Proper filo pastry — the paper-thin, layered sheets used across Greek, Turkish and Middle Eastern baking. Theos produce their filo in the traditional style: just wheat flour, water, sunflower oil, cornflour and salt, rolled and stretched to near-translucent thinness. No additives, no preservatives, no shortcuts.
The art of filo is in the layering — each sheet is brushed with oil or melted butter and stacked to create the characteristic hundreds of flaky, crisp layers that give baklava, spanakopita and börek their distinctive texture. The sheets are delicate but manageable with practice.
Vegan. Contains wheat (gluten).
How to use: Keep refrigerated and use within a few days of opening, or freeze for up to 3 months. Defrost in the fridge overnight before use. Keep unused sheets covered with a damp cloth while working to prevent drying and cracking.
