Indeed, the word ‘malic’ is derived from the Latin ‘malum’ meaning ‘apple’. The more sour the apple, the higher the malic acid content. It was first discovered in apple juice in 1785 by the German pharmceutical chemist Carl Wilhelm Scheele.
